Ingredients
2 tablespoons olive oil
2 pounds beef shank, cross-cut
1 teaspoon salt
1/2 teaspoon black pepper
1 large onion, chopped
3 cloves garlic, minced
2 carrots, chopped
2 celery stalks, chopped
2 tablespoons tomato paste
1 cup dry red wine
2 cups beef broth
2 sprigs fresh thyme
2 bay leaves
Instructions
Season beef shanks with salt and pepper. Heat olive oil in a large Dutch oven over medium-high heat. Sear shanks until browned on all sides, about 4 minutes per side. Remove and set aside.
Reduce heat to medium. Add onion, garlic, carrots, and celery. Cook until softened, about 5 minutes. Stir in tomato paste and cook for 1 minute.
Pour in red wine, scraping up any browned bits. Bring to a boil and let reduce by half, about 3 minutes.
Return beef shanks to pot. Add beef broth, thyme, and bay leaves. Bring to a simmer, then cover and transfer to a preheated 325°F oven.
Braise for 2.5 to 3 hours, until meat is very tender and falling off the bone. Remove from oven and discard thyme sprigs and bay leaves.
Skim excess fat from surface. Serve shanks with the braising liquid and vegetables.
