  2. Heat olive oil in a Dutch oven over medium-high heat. Sear beef cheeks until deeply browned on all sides, about 4 minutes per side. Remove and set aside.
  3. Reduce heat to medium. Add onion, carrots, and celery; cook until softened, about 5 minutes. Add garlic and tomato paste; cook 1 minute more.
  4. Pour in red wine, scraping up any browned bits. Bring to a simmer and cook until reduced by half, about 3 minutes.
  5. Return beef cheeks to pot. Add beef broth, thyme, and bay leaves. Liquid should come about halfway up the cheeks. Bring to a simmer.
  6. Cover and transfer to oven. Braise for 3 to 3.5 hours, until beef is fork-tender. Check halfway; add a splash of broth if liquid is low.
  7. Remove from oven. Discard thyme and bay leaves. Carefully transfer beef cheeks to a plate. Skim excess fat from sauce. If desired, puree vegetables with an immersion blender for a smoother sauce. Adjust seasoning.
  8. Return beef to sauce. Serve hot over mashed potatoes, polenta, or with crusty bread.
