Ingredients
500g (1 lb) ground beef
1 onion, finely chopped
2 garlic cloves, minced
2 carrots, finely diced
2 celery stalks, finely diced
400g (14 oz) canned crushed tomatoes
2 tbsp tomato paste
1/2 cup (120 ml) red wine
1/2 cup (120 ml) whole milk
1 bay leaf
4 large potatoes, cut into fries
2 tbsp olive oil
Salt and pepper to taste
Instructions
Preheat oven to 220°C (425°F). Toss potato fries with 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet and bake for 25-30 minutes, turning halfway, until golden and crispy.
In a large pot or Dutch oven, heat remaining olive oil over medium heat. Add onion, garlic, carrots, and celery; cook until softened, about 5 minutes.
Add ground beef and cook until browned, breaking it up with a spoon. Drain excess fat if necessary.
Stir in tomato paste and cook for 1 minute. Pour in red wine and let it reduce by half, about 2 minutes.
Add crushed tomatoes, milk, and bay leaf. Season with salt and pepper. Bring to a simmer, then reduce heat to low. Cover and cook for 30 minutes, stirring occasionally.
Remove bay leaf. Serve Bolognese sauce over the fries.
Tips
For extra flavor, add a pinch of nutmeg to the sauce.
Leftover Bolognese can be refrigerated for up to 3 days or frozen for 3 months.
