  5. Punch down dough and divide into 8 equal pieces. Roll each into a ball, then flatten into a 4-inch circle.
  6. Place a few strips of roasted pepper and a slice of Manchego cheese in the center of each circle. Gather edges and pinch to seal, forming a bun. Place seam-side down on a parchment-lined baking sheet.
  7. Cover buns with a clean towel and let rise for 30 minutes. Preheat oven to 375°F (190°C).
  8. Brush buns with egg yolk glaze. Bake for 18-20 minutes until golden brown. Transfer to a wire rack to cool slightly. Serve warm.
