A South African classic, this boerewors roll features a spiral of juicy, spiced sausage in a soft hot dog bun, topped with caramelized onions and tangy tomato relish.

Ingredients
4 boerewors sausages (about 500g total)
4 hot dog buns or soft rolls
2 large onions, thinly sliced
2 tablespoons vegetable oil
2 tablespoons butter
1 tablespoon brown sugar
1 tablespoon white vinegar
Salt and pepper to taste
1/2 cup tomato relish or chutney
Optional: mustard or peri-peri sauce
Instructions
Heat oil and butter in a large skillet over medium heat. Add sliced onions and cook, stirring occasionally, until soft and golden, about 15 minutes. Stir in brown sugar and vinegar, season with salt and pepper, and cook for another 2 minutes. Set aside.
Grill or pan-fry boerewors over medium heat, turning occasionally, until cooked through (internal temperature 71°C/160°F), about 10-12 minutes. If using a grill, cook over medium coals or gas.
Split the rolls open and toast lightly on the grill or in a toaster.
Place a cooked boerewors in each roll. Top with caramelized onions and a generous spoonful of tomato relish. Serve immediately with mustard or peri-peri sauce if desired.
Tips
For authentic flavor, use boerewors with coriander and cloves.
Leftover caramelized onions can be stored in the fridge for up to a week.
