  2. Stuff the mixture into the prepared hog casings, tying off into 6-inch links. Prick any air bubbles with a needle.
  3. Bring a large pot of water to a gentle simmer (about 170°F/77°C). Add the sausages and poach for 45-60 minutes, until firm. Do not boil.
  4. Remove sausages and plunge into ice water to stop cooking. Drain and pat dry.
  5. To serve, pan-fry the sausages over medium heat until browned and heated through.
