Ingredients
1 cup buckwheat flour
1/2 cup all-purpose flour
1 tsp salt
1 tsp sugar
1 cup warm milk
1 large egg
2 tbsp melted butter
1 cup water
1 lb ground beef
1 small onion, finely chopped
1 clove garlic, minced
1/2 tsp black pepper
2 tbsp vegetable oil
Instructions
In a bowl, whisk together buckwheat flour, all-purpose flour, salt, and sugar. Add warm milk, egg, melted butter, and water; whisk until smooth. Let batter rest for 15 minutes.
Meanwhile, heat 1 tbsp vegetable oil in a skillet over medium heat. Add onion and garlic; cook until soft, about 3 minutes. Add ground beef, salt, and pepper; cook until browned, breaking up meat. Remove from heat and let cool slightly.
Heat a non-stick skillet or crepe pan over medium heat and lightly grease with remaining oil. Pour about 1/4 cup batter per blini, swirling to spread thinly. Cook until bubbles form on surface and edges lift, about 2 minutes. Flip and cook 1 minute more. Repeat with remaining batter.
Place a spoonful of meat filling on each blini, roll up or fold into triangles. Serve warm.
Optional: garnish with sour cream and fresh dill.
Tips
For a lighter texture, substitute half the buckwheat flour with all-purpose flour.
Blini can be made ahead and reheated in a skillet.
