A homemade version of the classic fast-food burger, featuring two beef patties, American cheese, lettuce, pickles, and a special sauce on a sesame seed bun.

Ingredients
1 lb ground beef (80/20)
4 slices American cheese
4 sesame seed hamburger buns
1 cup shredded iceberg lettuce
8 dill pickle slices
1/2 cup mayonnaise
2 tbsp ketchup
1 tbsp sweet pickle relish
1 tsp white vinegar
1 tsp sugar
1/2 tsp onion powder
1/2 tsp paprika
Salt and pepper to taste
Instructions
In a small bowl, mix mayonnaise, ketchup, relish, vinegar, sugar, onion powder, and paprika to make the special sauce. Set aside.
Divide ground beef into 8 equal portions (about 2 oz each). Shape each into a thin patty, slightly larger than the bun. Season with salt and pepper.
Heat a griddle or large skillet over medium-high heat. Cook patties for 2-3 minutes per side until browned and cooked through.
In the last minute of cooking, place a slice of cheese on each of 4 patties. Stack the remaining 4 patties on top to form double-decker patties with cheese in the middle.
Toast the buns on the griddle until lightly golden.
Spread special sauce on the bottom bun. Add shredded lettuce, then the double patty, and top with 2 pickle slices. Cover with the top bun.
Serve immediately.
Tips
For best results, use a cast iron skillet or flat-top griddle.
You can adjust the sauce to taste by adding more ketchup or relish.
