Ingredients
4 boneless, skinless chicken breasts (about 6 oz each)
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
1 cup mixed berries (fresh or frozen, such as strawberries, blueberries, raspberries)
2 tablespoons balsamic vinegar
2 tablespoons honey
1 tablespoon soy sauce
1 clove garlic, minced
1 teaspoon cornstarch mixed with 1 tablespoon water (slurry)
Instructions
Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until golden brown and cooked through, about 5-6 minutes per side. Transfer to a plate and keep warm.
In the same skillet, add berries, balsamic vinegar, honey, soy sauce, and garlic. Cook over medium heat, stirring occasionally, until berries break down and mixture starts to simmer, about 3-4 minutes.
Stir in cornstarch slurry and continue to cook until glaze thickens, about 1-2 minutes. Return chicken to skillet, turning to coat with glaze. Cook for 1 minute to reheat.
Serve chicken with glaze spooned over the top.

For a thicker glaze, let it simmer a bit longer after adding the slurry.
