Ingredients
2 cups all-purpose flour
2 tablespoons granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
2 large eggs
1 3/4 cups milk
1/2 cup unsalted butter, melted
1 teaspoon vanilla extract
1 cup heavy cream
2 tablespoons powdered sugar
1 teaspoon vanilla extract
2 cups fresh strawberries, sliced
Instructions
Preheat your Belgian waffle iron according to manufacturer's instructions.
In a large bowl, whisk together flour, sugar, baking powder, and salt.
In another bowl, beat eggs, then add milk, melted butter, and vanilla extract; mix well.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; batter may be slightly lumpy.
Pour about 1/2 cup of batter onto the hot waffle iron and cook until golden brown and crisp, about 3-5 minutes. Repeat with remaining batter.
While waffles cook, make whipped cream: In a chilled bowl, beat heavy cream, powdered sugar, and vanilla extract with an electric mixer until soft peaks form.
Serve waffles topped with sliced strawberries and a dollop of whipped cream.
Tips
For extra crisp waffles, keep them warm on a wire rack in a 200°F oven while cooking the rest.
If strawberries are not sweet enough, toss them with a teaspoon of sugar before serving.
