Ingredients
4 large russet potatoes (about 2 lbs), scrubbed and cut into 1/2-inch thick fries
1 1/2 lbs cod or haddock fillets, cut into 4 portions
1 cup all-purpose flour
1 tsp baking powder
1/2 tsp salt, plus more for seasoning
1/4 tsp black pepper
1 cup cold lager beer (such as pilsner)
1 large egg, separated
Vegetable oil, for deep frying
Malt vinegar and tartar sauce, for serving
Instructions
Place cut potatoes in a large bowl of cold water and soak for at least 30 minutes. Drain and pat dry thoroughly.
Heat 2 inches of oil in a deep heavy pot to 325°F. Fry potatoes in batches until pale golden but not browned, about 5-6 minutes. Drain on paper towels. Increase oil temperature to 375°F.
Meanwhile, prepare batter: In a medium bowl, whisk together flour, baking powder, 1/2 tsp salt, and pepper. In a separate bowl, mix beer and egg yolk. Pour beer mixture into flour mixture and whisk until smooth. In a clean bowl, beat egg white to stiff peaks, then fold into batter.
Season fish fillets with salt and pepper. Dip each piece into batter, allowing excess to drip off.
Carefully lower battered fish into hot oil (375°F) and fry in batches until golden brown and cooked through, about 5-6 minutes. Drain on paper towels.
Return potatoes to the hot oil and fry until deep golden and crispy, about 2-3 minutes. Drain and season with salt.
Serve immediately with malt vinegar and tartar sauce.

For extra crispy chips, double-fry: after first fry, let cool completely, then fry again at higher temperature.
