- 2 cups cooked jasmine rice, preferably day-old
- 8 oz flank steak, thinly sliced against the grain
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon white pepper
- 2 tablespoons vegetable oil, divided
- 2 large eggs, beaten
- 1 cup frozen peas and carrots, thawed
- 3 green onions, sliced
- 2 cloves garlic, minced
Instructions
- In a bowl, combine sliced beef with 1 tablespoon soy sauce, 1 teaspoon vegetable oil, and white pepper. Let marinate for 10 minutes.
- In a small bowl, mix remaining 1 tablespoon soy sauce, oyster sauce, and sesame oil. Set aside.
- Heat 1 tablespoon vegetable oil in a wok or large skillet over high heat. Add beef and stir-fry until browned, about 2 minutes. Remove and set aside.
- Add remaining 1 tablespoon oil to the wok. Pour in beaten eggs and scramble until just set, then break into small pieces.
- Add garlic, peas and carrots, and half the green onions. Stir-fry for 1 minute.
- Add the cooked rice and the sauce mixture. Stir-fry, breaking up clumps, until rice is heated through and well coated, about 2 minutes.
- Return beef to the wok and toss to combine. Garnish with remaining green onions and serve immediately.
