  2. Lay the pounded steak flat on a work surface. Spread the filling evenly over the meat, leaving a 1-inch border around the edges.
  3. Roll the steak tightly from one short end, like a jelly roll. Tie securely with kitchen twine at 2-inch intervals to hold its shape. Season the outside with salt and pepper.
  4. In a large Dutch oven or heavy pot, heat olive oil over medium-high heat. Brown the beef roll on all sides, about 8 minutes total. Transfer to a plate.
  5. Reduce heat to medium. Add onion and cook until softened, about 5 minutes. Stir in tomato paste and cook for 1 minute.
  6. Add crushed tomatoes, wine or broth, bay leaf, and oregano. Return the beef roll to the pot, spooning some sauce over it. Bring to a simmer.
