Ingredients
1 lb beef sirloin, thinly sliced
2 medium potatoes, peeled and thinly sliced
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 teaspoon sugar
1/2 teaspoon black pepper
2 tablespoons vegetable oil
3 cloves garlic, minced
1 small onion, sliced
2 green onions, sliced for garnish
Instructions
In a bowl, mix beef slices with soy sauce, oyster sauce, sugar, and black pepper. Marinate for 10 minutes.
Heat 1 tablespoon oil in a wok or large skillet over high heat. Add potato slices and stir-fry until golden and tender, about 5 minutes. Remove and set aside.
Add remaining oil to the wok. Stir-fry garlic and onion until fragrant, about 30 seconds.
Add beef and stir-fry until browned, about 2-3 minutes.
Return potatoes to the wok, toss everything together for 1 minute.
Garnish with green onions and serve immediately.
Tips
For crispier potatoes, soak sliced potatoes in cold water for 10 minutes then pat dry before frying.
