Ingredients
4 slices sourdough or white bread
2 tablespoons unsalted butter, softened
1/2 pound thinly sliced roast beef
4 slices sharp cheddar cheese
2 tablespoons mayonnaise
1 tablespoon Dijon mustard
Salt and black pepper to taste
Instructions
Preheat a skillet or griddle over medium heat.
Spread butter on one side of each bread slice.
In a small bowl, mix mayonnaise and Dijon mustard. Spread the mixture on the unbuttered sides of two bread slices.
Layer roast beef and cheddar cheese on the mayonnaise-mustard side of those two slices. Season with salt and pepper. Top with remaining bread slices, buttered side up.
Place sandwiches in the skillet and cook until golden brown and cheese is melted, about 3-4 minutes per side. Press down with a spatula occasionally.
Remove from heat, let cool slightly, then slice in half and serve.
Tips
For extra flavor, add caramelized onions or horseradish sauce.
