Ingredients
1 cup dried mung beans, soaked overnight
1/2 cup water
1/2 teaspoon salt
1/4 teaspoon white pepper
2 tablespoons vegetable oil, divided
2 green onions, finely chopped
2 cloves garlic, minced
2 red chili peppers, finely chopped
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 teaspoon sugar
1/4 cup water
Instructions
Drain soaked mung beans and blend with 1/2 cup water until smooth. Stir in salt and white pepper.
Heat 1 tablespoon oil in a non-stick skillet over medium heat. Pour in bean mixture and spread evenly. Cook until bottom is golden and set, about 5 minutes. Flip and cook other side until golden, about 4 minutes. Transfer to a plate and cut into squares.
In the same skillet, heat remaining 1 tablespoon oil. Sauté green onions, garlic, and chili peppers for 1 minute.
Add soy sauce, rice vinegar, sugar, and 1/4 cup water. Simmer for 2 minutes until slightly thickened.
Pour pepper sauce over bean cake squares and serve immediately.
Tips
For extra crispiness, pan-fry the bean cake longer on each side.
Adjust the amount of chili peppers to your spice preference.
Leftover bean cake can be refrigerated and reheated in a skillet.
