  1. Drain and rinse the soaked beans. Set aside.
  2. In a large pot or Dutch oven, heat olive oil over medium heat. Add onion, carrots, and celery; cook until softened, about 5 minutes. Add garlic and cook 1 minute more.
  3. Add the ham hock (or diced ham), beans, broth, bay leaves, and thyme. Bring to a boil, then reduce heat to low, cover, and simmer for 1.5 to 2 hours, until beans are tender.
  4. If using ham hock, remove it from the pot. Let cool slightly, then shred the meat, discarding bone and fat. Return meat to the pot.
  5. Remove bay leaves. Season with salt and pepper to taste. If desired, use an immersion blender to partially puree the soup for a thicker texture.
  6. Serve hot, garnished with parsley if desired.
