1 (15-ounce) can refried beans
1/2 cup water
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1 (12-ounce) bag tortilla chips
2 cups shredded Mexican blend cheese
1/2 cup diced tomatoes
1/4 cup sliced black olives
1/4 cup sliced jalapeños
1/4 cup chopped fresh cilantro
1/2 cup sour cream
1/2 cup salsa
Instructions
Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
In a small saucepan, combine refried beans, water, cumin, and chili powder. Cook over medium heat, stirring, until smooth and heated through, about 3 minutes.
Spread tortilla chips in an even layer on the prepared baking sheet. Spoon the warm bean mixture over the chips. Sprinkle with shredded cheese.
Bake for 5-7 minutes, until cheese is melted and bubbly.
Remove from oven and top with diced tomatoes, black olives, jalapeños, and cilantro. Serve immediately with sour cream and salsa on the side.
