Ingredients
1 (13-ounce) bag tortilla chips
2 cups shredded cooked pulled pork (from about 1 pound)
1 cup BBQ sauce
2 cups shredded sharp cheddar cheese
1 cup shredded Monterey Jack cheese
1/2 cup sour cream
1/2 cup pico de gallo or diced tomatoes
1/4 cup sliced pickled jalapeños
1/4 cup chopped fresh cilantro
1 avocado, diced
Instructions
Preheat oven to 400°F (200°C). Line a large baking sheet with foil or parchment.
In a small bowl, toss the pulled pork with BBQ sauce until well coated.
Spread half the tortilla chips in an even layer on the prepared baking sheet. Top with half the pulled pork, then half the cheddar and Monterey Jack cheeses.
Add the remaining chips, then the remaining pork and cheeses.
Bake for 8-10 minutes, until cheese is melted and bubbly.
Remove from oven and immediately top with sour cream, pico de gallo, pickled jalapeños, cilantro, and diced avocado. Serve hot.
Tips
For extra crunch, use thick-cut tortilla chips.
Leftover pulled pork works great; reheat with a splash of water or broth before adding BBQ sauce.
Customize toppings: add black beans, corn, or sliced radishes.
