Ingredients
4 bone-in, skin-on chicken thighs (about 1.5 lbs)
1 cup your favorite BBQ sauce
2 tablespoons olive oil
1 teaspoon smoked paprika
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Preheat grill to medium-high heat (about 400°F) or oven to 425°F.
In a small bowl, mix olive oil, smoked paprika, garlic powder, salt, and pepper. Rub mixture all over chicken thighs.
Grill chicken skin-side down for 5-7 minutes until grill marks appear. Flip and cook another 5 minutes. (If baking, place skin-side up on a foil-lined baking sheet and bake 15 minutes.)
Brush chicken generously with BBQ sauce. Continue grilling (or baking) for 5-10 more minutes, turning and brushing with sauce every few minutes, until internal temperature reaches 165°F.
Remove from heat, let rest 5 minutes, and serve with extra BBQ sauce on the side.
Tips
For extra smoky flavor, add a handful of soaked wood chips to the grill.
Leftover chicken can be stored in the fridge for up to 3 days; reheat in a 350°F oven.
Serve with coleslaw and cornbread for a classic BBQ meal.
