Ingredients
1 lb pizza dough, room temperature
1 cup cooked shredded chicken
1/2 cup BBQ sauce, plus more for drizzling
8 string cheese sticks (or 8 oz mozzarella cheese sticks)
1 cup shredded mozzarella cheese
1/4 cup red onion, thinly sliced
2 tbsp fresh cilantro, chopped
1 tbsp olive oil
1 tbsp cornmeal (for dusting)
Instructions
Preheat oven to 475°F (245°C). Place a pizza stone or inverted baking sheet in the oven to heat.
In a small bowl, toss shredded chicken with 1/4 cup BBQ sauce until well coated.
On a lightly floured surface, roll or stretch pizza dough into a 14-inch circle. Place on a piece of parchment paper dusted with cornmeal.
Arrange string cheese sticks around the edge of the dough, about 1/2 inch from the edge. Fold the dough edge over the cheese and press to seal, creating a stuffed crust.
Spread remaining 1/4 cup BBQ sauce evenly over the dough, leaving the stuffed crust bare.
Sprinkle shredded mozzarella over the sauce. Top with BBQ chicken and red onion slices.
Carefully transfer the pizza (on parchment) onto the preheated stone or baking sheet. Bake for 12-15 minutes, until crust is golden and cheese is bubbly.
Remove from oven, drizzle with extra BBQ sauce, and sprinkle with chopped cilantro. Let cool for 2 minutes before slicing.
Tips
For extra smoky flavor, use smoked mozzarella or add a pinch of smoked paprika to the chicken.
Serve with ranch dressing or blue cheese dip on the side.
Leftover pizza can be stored in the fridge and reheated in a 350°F oven for 5-7 minutes.
