Ingredients
2 cups cooked shredded chicken (from rotisserie or poached)
1/2 cup BBQ sauce (your favorite brand)
1 tablespoon apple cider vinegar
1/2 teaspoon smoked paprika
6 slider buns
1 cup coleslaw mix (shredded cabbage and carrots)
2 tablespoons mayonnaise
1 teaspoon Dijon mustard
Salt and pepper to taste
2 tablespoons butter, melted (for buns)
Instructions
In a medium bowl, combine shredded chicken, BBQ sauce, apple cider vinegar, and smoked paprika. Mix well and set aside.
In a small bowl, whisk together mayonnaise, Dijon mustard, and a pinch of salt and pepper. Add coleslaw mix and toss to coat.
Preheat a skillet or grill pan over medium heat. Brush cut sides of slider buns with melted butter.
Toast buns cut-side down in the skillet until golden, about 1-2 minutes. Remove and set aside.
In the same skillet, add the BBQ chicken mixture and cook over medium heat, stirring occasionally, until heated through, about 5 minutes.
Assemble sliders: place a generous spoonful of BBQ chicken on the bottom half of each bun, top with a small amount of coleslaw, and cover with the top bun.
Serve immediately.
Tips
For extra flavor, add a slice of cheddar cheese on top of the chicken before toasting the bun top.
Leftover chicken mixture can be stored in the fridge for up to 3 days.
To make ahead, prepare chicken and coleslaw separately and assemble just before serving.
