1 cup corn kernels (fresh, canned, or thawed frozen)
1/2 cup canned black beans, rinsed and drained
1/2 cup shredded cheddar cheese
1/4 cup chopped red onion
1/4 cup chopped fresh cilantro
1/2 cup ranch dressing
Instructions
Preheat grill or grill pan to medium-high heat. Season chicken breasts with salt and pepper. Grill for 6-7 minutes per side, or until cooked through (internal temperature 165°F). During the last few minutes, brush generously with BBQ sauce on both sides. Remove from grill and let rest 5 minutes, then slice.
In a large bowl, combine salad greens, cherry tomatoes, corn, black beans, cheddar cheese, red onion, and cilantro.
Add sliced BBQ chicken on top. Drizzle with ranch dressing and toss gently to combine. Serve immediately.
Tips
For extra flavor, use a smoky BBQ sauce.
You can substitute grilled chicken with leftover rotisserie chicken tossed in BBQ sauce.
