A New Orleans-style sandwich with juicy BBQ chicken, tangy coleslaw, and creamy remoulade sauce on a crispy French roll.

Ingredients
1 lb boneless skinless chicken breasts
1 cup BBQ sauce
1 tbsp olive oil
4 French rolls or hoagie buns
2 cups shredded green cabbage
1/2 cup shredded carrot
1/4 cup mayonnaise
1 tbsp apple cider vinegar
1 tsp sugar
1/2 tsp celery seed
Salt and pepper to taste
1/2 cup mayonnaise
2 tbsp ketchup
1 tbsp Dijon mustard
1 tsp hot sauce
1 tsp lemon juice
1 clove garlic, minced
Instructions
Preheat grill or grill pan to medium-high heat. Season chicken with salt and pepper. Grill chicken for 6-7 minutes per side, basting with BBQ sauce during the last 2 minutes per side, until internal temperature reaches 165°F. Let rest 5 minutes, then shred or slice.
Meanwhile, make coleslaw: In a bowl, combine cabbage, carrot, 1/4 cup mayonnaise, vinegar, sugar, celery seed, salt, and pepper. Toss well and refrigerate.
Make remoulade: In a small bowl, mix 1/2 cup mayonnaise, ketchup, mustard, hot sauce, lemon juice, and garlic. Season with salt and pepper.
Split rolls and toast lightly on the grill or in the oven. Spread remoulade on both sides of each roll.
Pile shredded chicken on the bottom half of each roll, top with coleslaw, and close the sandwich. Serve immediately.
Tips
For extra flavor, use smoked paprika in the remoulade.
Serve with pickles and hot sauce on the side.
Leftover chicken can be stored in the fridge for up to 3 days.
