Ingredients
2 cups cooked shredded chicken (about 2 small breasts)
1/2 cup barbecue sauce (preferably smoky)
2 tablespoons tomato paste
1 tablespoon apple cider vinegar
1 tablespoon brown sugar
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon cayenne pepper (optional)
Salt and black pepper to taste
Instructions
In a medium bowl, whisk together the barbecue sauce, tomato paste, apple cider vinegar, brown sugar, smoked paprika, garlic powder, onion powder, cayenne (if using), and a pinch of salt and pepper.
Add the shredded chicken to the bowl and toss until well coated.
Heat a skillet over medium-high heat. Add the chicken mixture and cook for 5-7 minutes, stirring occasionally, until the sauce thickens and caramelizes slightly.
Remove from heat and let cool slightly before using as a pizza topping.
Tips
For extra flavor, use leftover rotisserie chicken.
This topping can be made ahead and refrigerated for up to 3 days.
