Ingredients
2 tablespoons olive oil
1 medium onion, diced
3 cloves garlic, minced
1/2 cup ketchup
1/4 cup molasses
1/4 cup brown sugar, packed
2 tablespoons apple cider vinegar
1 tablespoon Worcestershire sauce
1 tablespoon yellow mustard
1 teaspoon smoked paprika
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional)
4 cans (15 oz each) navy beans, drained and rinsed
1/2 cup water
Instructions
Preheat oven to 325°F (160°C).
In a large oven-safe pot or Dutch oven, heat olive oil over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
Stir in ketchup, molasses, brown sugar, apple cider vinegar, Worcestershire sauce, mustard, smoked paprika, black pepper, and cayenne if using. Bring to a simmer.
Add the drained beans and water, stirring to combine. Bring back to a simmer.
Cover the pot and transfer to the preheated oven. Bake for 45 minutes, then uncover and bake for an additional 15 minutes, or until thickened to your liking.
Remove from oven and let cool for 5 minutes before serving. Adjust seasoning with salt and pepper if needed.
Tips
For a smokier flavor, add 1/2 cup of cooked, crumbled bacon along with the beans.
These beans can be made ahead and reheated; they taste even better the next day.
