Instructions
In a medium bowl, whisk together eggs, milk, sugar, vanilla, and salt until well combined.
For pancakes: Add flour and baking powder; whisk until smooth (lumps are okay). For French toast: Add flour only; whisk until smooth.
Let batter rest for 5 minutes while you heat your pan or griddle.
Cook according to your recipe: for pancakes, pour 1/4 cup batter per pancake onto greased medium-hot griddle; cook until bubbles form, then flip. For French toast, dip bread slices into batter, coating both sides, then cook on buttered griddle until golden.
Tips
For thinner pancakes, add 1-2 tablespoons more milk.
