  3. Pour the yolk mixture back into the saucepan, whisking constantly. Cook over medium-low heat, stirring continuously with a wooden spoon, until the mixture thickens enough to coat the back of the spoon (about 170°F on a thermometer). Do not let it boil.
  4. Remove from heat and stir in vanilla extract. Strain the custard through a fine-mesh sieve into a clean bowl to remove any cooked egg bits.
  5. Let the custard cool to room temperature, then cover and refrigerate until thoroughly chilled, at least 4 hours or overnight.
  6. Churn the chilled base in an ice cream maker according to the manufacturer's instructions. Transfer to an airtight container and freeze until firm, at least 4 hours.
