Ingredients
1 1/2 cups all-purpose flour
1/2 teaspoon salt
1/4 teaspoon baking powder
1/2 cup unsalted butter, cold and cubed
1 large egg yolk
3-4 tablespoons ice water
Instructions
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a food processor, pulse flour, salt, and baking powder to combine. Add cold butter cubes and pulse until mixture resembles coarse crumbs.
Add egg yolk and 3 tablespoons ice water; pulse until dough just holds together. If too dry, add remaining water 1 teaspoon at a time.
Turn dough onto a lightly floured surface and knead gently 2-3 times. Roll out to 1/4-inch thickness.
Using a 2-inch round cutter, cut out rounds. Transfer to prepared baking sheet. Prick each round with a fork.
Bake for 10-12 minutes until edges are lightly golden. Cool completely on a wire rack. Store in an airtight container for up to 3 days.
Tips
For a savory variation, add 1/4 cup grated Parmesan cheese to the flour mixture.
For sweet canapés, add 1 tablespoon sugar and a pinch of cinnamon.
Can be frozen unbaked for up to 1 month; bake directly from frozen, adding 2 minutes to baking time.
