Ingredients
- 1/2 cup pearl barley
- 6 cups water
- 1/4 cup honey or sugar, adjust to taste
- 1 lemon, thinly sliced
- Pinch of salt
Instructions
- Rinse the pearl barley under cold water.
- In a large saucepan, combine barley and 6 cups water. Bring to a boil, then reduce heat and simmer, partially covered, for 30 minutes.
- Add honey (or sugar), lemon slices, and salt. Continue simmering for another 15 minutes.
- Remove from heat and let cool slightly. Strain the liquid through a fine-mesh sieve into a pitcher, discarding the barley and lemon slices.
- Chill in the refrigerator for at least 2 hours before serving over ice.
