Ingredients
- 3 ripe bananas, mashed (about 1 1/2 cups)
- 1/3 cup melted butter
- 3/4 cup granulated sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- pinch of salt
- 1 1/2 cups all-purpose flour
Instructions
- Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
- In a large bowl, mash the bananas with a fork. Stir in the melted butter.
- Mix in the sugar, egg, and vanilla extract until well combined.
- Sprinkle the baking soda and salt over the mixture, then stir in.
- Add the flour and mix just until incorporated. Do not overmix.
- Pour the batter into the prepared loaf pan.
- Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
