Ingredients
- 500g fresh or frozen okra, trimmed
- 300g lamb or beef stew meat, cubed
- 1 large onion, diced
- 3 cloves garlic, minced
- 400g canned crushed tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2 cups beef or chicken broth
- Juice of 1 lemon
Instructions
- Heat olive oil in a large pot over medium-high heat. Brown the meat on all sides, then remove and set aside.
- In the same pot, sauté onion until soft, about 5 minutes. Add garlic and cook for 1 minute.
- Stir in tomato paste, coriander, cumin, cinnamon, salt, and pepper. Cook for 2 minutes.
- Add crushed tomatoes, broth, and browned meat. Bring to a boil, then reduce heat to low, cover, and simmer for 30 minutes.
- Add okra and lemon juice. Simmer uncovered for 15-20 minutes until okra is tender and sauce thickens.
- Adjust seasoning and serve hot over rice or with bread.

- If using frozen okra, do not thaw before adding to the pot to prevent sliminess.
- For a vegetarian version, omit meat and use vegetable broth; add chickpeas for protein.
