4 tilapia fillets (about 6 oz each)
1/2 cup grated Parmesan cheese
1/4 cup panko breadcrumbs
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
1 tablespoon melted butter
1 tablespoon chopped fresh parsley (for garnish)
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease.
In a small bowl, combine Parmesan, panko, garlic powder, paprika, salt, and pepper.
Pat tilapia fillets dry with paper towels. Brush each fillet with olive oil on both sides.
Place fillets on prepared baking sheet. Press the Parmesan mixture evenly onto the top of each fillet.
Drizzle melted butter over the crusted fillets.
Bake for 12-15 minutes, until fish is opaque and flakes easily with a fork, and crust is golden brown.
Garnish with chopped parsley and serve immediately.
Tips
For extra crispiness, broil for the last 1-2 minutes, watching carefully to avoid burning.
