Scrub potatoes thoroughly and pat dry. Pierce each potato several times with a fork.
Rub potatoes with olive oil, then sprinkle evenly with salt and pepper.
Place potatoes directly on the oven rack or on the prepared baking sheet. Bake for 50-60 minutes, until skin is crispy and a fork easily pierces the center.
Remove from oven and let rest for 5 minutes. Slice open lengthwise, fluff the inside with a fork, and add desired toppings.

For extra crispy skin, rub potatoes with oil and salt, then bake directly on the oven rack.
