Ingredients
4 (6 oz) skinless white fish fillets (like cod or tilapia) or boneless skinless chicken breasts
2 cups crushed potato chips (plain or lightly salted)
1/4 cup all-purpose flour
2 large eggs
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/4 teaspoon black pepper
1/4 teaspoon salt (omit if chips are salty)
2 tablespoons olive oil or melted butter (for drizzling)
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease.
Place crushed potato chips in a shallow dish. In another shallow dish, mix flour with garlic powder, paprika, pepper, and salt. In a third dish, beat eggs.
Pat fish or chicken dry with paper towels. Dredge each piece in flour mixture, shaking off excess. Dip into beaten eggs, then press into crushed chips, coating all sides.
Place coated pieces on prepared baking sheet. Drizzle lightly with olive oil or melted butter.
