Ingredients
4 large russet potatoes (about 10 oz each)
2 tablespoons olive oil
1 teaspoon kosher salt
1/2 cup shredded cheddar cheese
1/2 cup sour cream
4 slices bacon, cooked and crumbled
2 tablespoons unsalted butter
2 tablespoons chopped fresh chives
Salt and black pepper to taste
Instructions
Preheat oven to 425°F (220°C). Scrub potatoes and pat dry. Pierce each potato several times with a fork.
Rub potatoes with olive oil and sprinkle with kosher salt. Place directly on oven rack and bake for 50-60 minutes, until tender when pierced with a fork.
While potatoes bake, cook bacon until crispy, then crumble. Shred cheese and chop chives.
Remove potatoes from oven and let cool slightly. Slice each potato open lengthwise and fluff the inside with a fork.
Top each potato with butter, then cheese, sour cream, bacon, and chives. Season with salt and pepper to taste. Serve immediately.
