Ingredients
4 white fish fillets (such as cod, tilapia, or halibut), about 6 oz each
2 tablespoons olive oil
2 cloves garlic, minced
1 lemon, thinly sliced
2 tablespoons fresh lemon juice
1 teaspoon dried oregano
Salt and freshly ground black pepper to taste
2 tablespoons chopped fresh parsley for garnish
Instructions
Preheat oven to 400°F (200°C) if baking, or heat a large non-stick skillet over medium-high heat if pan-searing.
Pat fish fillets dry with paper towels. Season both sides with salt, pepper, and dried oregano.
For baking: Place fillets in a lightly oiled baking dish. Drizzle with olive oil and lemon juice. Top with lemon slices and minced garlic. Bake for 12-15 minutes, until fish flakes easily with a fork.
For pan-searing: Add olive oil to hot skillet. Place fillets skin-side down if applicable. Cook 3-4 minutes per side, until golden and cooked through. Add garlic and lemon juice in the last minute, and serve with lemon slices.
Garnish with fresh parsley and serve immediately.
Tips
For best results, use fresh fish fillets of similar thickness.
Serve with steamed vegetables or rice to soak up the lemon butter sauce.
Leftovers can be stored in the refrigerator for up to 2 days.
