Ingredients
4 (6 oz) fish fillets (such as cod, tilapia, or salmon) or 4 boneless skinless chicken breasts (about 6 oz each)
2 tablespoons unsalted butter, melted
2 tablespoons lemon juice
2 cloves garlic, minced
1 teaspoon dried dill or 1 tablespoon fresh dill, chopped
1 teaspoon dried parsley or 1 tablespoon fresh parsley, chopped
Salt and pepper to taste
Lemon slices for garnish (optional)
Instructions
Preheat oven to 400°F (200°C). Lightly grease a baking dish.
In a small bowl, whisk together melted butter, lemon juice, minced garlic, dill, and parsley.
Place fish fillets or chicken breasts in the prepared baking dish. Season with salt and pepper.
Pour the butter mixture evenly over the fish or chicken.
Bake for 15-25 minutes, depending on thickness: fish is done when it flakes easily with a fork (145°F internal temp), chicken when juices run clear (165°F internal temp).
Garnish with lemon slices if desired and serve immediately.
Tips
For extra flavor, add a splash of white wine to the butter mixture.
Serve with steamed vegetables or rice to soak up the sauce.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
