Ingredients
2 pints cherry tomatoes
1 (8 oz) block feta cheese
1/4 cup olive oil
3 cloves garlic, minced
1/4 teaspoon red pepper flakes (optional)
1/2 teaspoon dried oregano
1/4 teaspoon black pepper
10 oz pasta (such as penne or fusilli)
1/4 cup fresh basil leaves, chopped
Salt to taste
Instructions
Preheat oven to 400°F (200°C). Place cherry tomatoes and block of feta in a 9x13-inch baking dish. Drizzle with olive oil and sprinkle with garlic, red pepper flakes, oregano, and black pepper.
Bake for 30-35 minutes, until tomatoes are soft and bursting, and feta is golden around the edges.
While the feta bakes, cook pasta according to package directions in salted boiling water until al dente. Reserve 1/2 cup pasta water, then drain.
Remove baking dish from oven. Stir the tomatoes and feta together with a wooden spoon, mashing the tomatoes and feta to create a creamy sauce. Add the cooked pasta and toss to coat, adding reserved pasta water a little at a time if needed for consistency.
Stir in fresh basil. Taste and adjust salt if needed. Serve immediately.
Tips
For extra protein, add cooked chicken or shrimp when tossing with pasta.
Leftovers can be stored in the fridge for up to 3 days; reheat gently with a splash of water.
Use a high-quality feta in brine for best melting and flavor.
