Ingredients
2 large day-old bagels (plain or everything)
4 large eggs
1/2 cup whole milk
1 tablespoon granulated sugar
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
2 tablespoons unsalted butter, for frying
Instructions
Slice each bagel horizontally into 2 or 3 even rings (about 1/2-inch thick).
In a shallow dish, whisk together eggs, milk, sugar, vanilla, cinnamon, and salt until smooth.
Heat a large nonstick skillet or griddle over medium heat and add 1 tablespoon butter.
Dip each bagel ring into the egg mixture, letting it soak for about 15 seconds per side. Do not oversoak or bagels will become soggy.
Place soaked bagel rings in the hot skillet. Cook until golden brown, about 2-3 minutes per side. Repeat with remaining bagels, adding more butter as needed.
Serve immediately with maple syrup, fresh fruit, or a dusting of powdered sugar.

Use day-old bagels for best texture; fresh bagels may become too soft.
