Ingredients
24 pitted Medjool dates or whole water chestnuts
12 slices thin-cut bacon, cut in half crosswise
1/4 cup brown sugar
2 tablespoons soy sauce
1 teaspoon chili powder (optional)
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
If using dates, slit each date open and remove pit if not already pitted. If using water chestnuts, drain and pat dry.
Wrap each date or water chestnut with a half slice of bacon, securing with a toothpick if needed. Place seam-side down on the prepared baking sheet.
In a small bowl, mix brown sugar, soy sauce, and chili powder (if using). Brush the mixture over the bacon-wrapped pieces.
Bake for 15-20 minutes, until bacon is crispy and caramelized. Turn halfway through for even cooking.
Let cool for 5 minutes before serving. Remove toothpicks if used.
Tips
For extra crispiness, broil for 1-2 minutes at the end, watching closely.
Can be made ahead and reheated in a 350°F oven for 5 minutes.
