Ingredients
1 lb ground beef (80/20)
8 slices thick-cut bacon
4 slices cheddar cheese
4 hamburger buns
4 leaves lettuce
4 slices tomato
4 slices red onion
2 tbsp butter, softened
1/4 cup mayonnaise
2 tbsp ketchup
1 tbsp yellow mustard
1 tsp smoked paprika
1/2 tsp garlic powder
Salt and pepper to taste
Instructions
Cook bacon in a skillet over medium heat until crispy, about 8 minutes. Drain on paper towels.
Mix mayonnaise, ketchup, mustard, smoked paprika, and garlic powder in a small bowl to make the sauce.
Divide ground beef into 4 equal portions and shape into patties slightly larger than the buns. Season with salt and pepper.
Grill or pan-fry patties over medium-high heat, about 4 minutes per side for medium. Top each with a slice of cheese during the last minute, cover to melt.
Butter the cut sides of the buns and toast on the grill or in a skillet until golden.
Assemble burgers: spread sauce on bottom bun, add lettuce, tomato, onion, patty with cheese, 2 slices bacon, and top bun.
Serve immediately.
Tips
Use applewood-smoked bacon for extra flavor.
Let patties rest for 2 minutes after cooking to retain juices.
Store leftover sauce in the fridge for up to a week.
