Ingredients
1 cup pancake mix
2/3 cup milk
1 tablespoon maple syrup
1/2 teaspoon maple extract (optional)
4 slices bacon
2 large eggs
2 slices American cheese

Instructions
In a bowl, whisk together pancake mix, milk, maple syrup, and maple extract until smooth. Let batter rest for 5 minutes.
Cook bacon in a skillet over medium heat until crispy. Transfer to paper towels to drain, reserving some bacon fat in the skillet.
Pour batter into a greased griddle or non-stick pan to form 4 small pancakes (about 4 inches each). Cook until bubbles form on surface, then flip and cook until golden. Brush each pancake with a little maple syrup while hot.
In the same skillet with bacon fat, fry eggs to desired doneness (sunny-side up or over easy), seasoning with salt and pepper.
Assemble sandwiches: Place a slice of cheese on one pancake, top with a fried egg, two slices of bacon, then another pancake. Repeat for second sandwich.
Serve immediately, optionally with extra maple syrup for dipping.
Tips
For extra maple flavor, add a splash of maple syrup to the pancake batter.
Use a round cookie cutter to shape the pancakes perfectly.
These sandwiches are best eaten fresh but can be wrapped in foil and reheated in a toaster oven.
