Ingredients
1 slice sourdough or whole-grain bread
1/2 ripe avocado
1 large egg
1 teaspoon olive oil or butter
Salt and freshly ground black pepper to taste
Optional: red pepper flakes, lemon juice, or microgreens for garnish
Instructions
Toast the bread slice until golden and crisp.
While bread toasts, cut the avocado in half, remove the pit, and scoop the flesh into a small bowl. Mash with a fork to desired consistency; season with salt and pepper.
Heat olive oil or butter in a non-stick skillet over medium heat. Crack the egg into the pan and cook until whites are set but yolk is still runny, about 2-3 minutes. For a firmer yolk, cook 1-2 minutes longer.
Spread the mashed avocado onto the toast. Place the fried egg on top. Season with additional salt, pepper, and optional garnishes. Serve immediately.
