Ingredients
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground allspice
1/4 teaspoon ground cloves
1/2 teaspoon salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup packed light brown sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup buttermilk
2 cups peeled, cored, and finely chopped apples (about 2 medium apples)
Instructions
Preheat oven to 350°F (175°C). Grease and flour a 9-inch bundt pan.
In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, allspice, cloves, and salt.
In a large bowl, beat butter, granulated sugar, and brown sugar with an electric mixer until light and fluffy, about 3 minutes. Beat in eggs one at a time, then vanilla.
Alternately add flour mixture and buttermilk to the butter mixture, beginning and ending with flour. Mix just until combined. Fold in chopped apples.
Pour batter into prepared pan and spread evenly. Bake 45–50 minutes, until a toothpick inserted in center comes out clean.
Cool in pan on a wire rack for 15 minutes, then invert onto rack to cool completely. Serve plain or with cream cheese frosting.
Tips
Use a mix of tart and sweet apples like Granny Smith and Honeycrisp for best flavor.
Store cake in an airtight container at room temperature for up to 3 days.
For extra moisture, brush cooled cake with simple syrup before serving.
