Ingredients
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
32 oz (4 packages) cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
4 large eggs
1/2 cup sour cream
3 large apples (e.g., Granny Smith), peeled, cored, and thinly sliced
1/4 cup granulated sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons unsalted butter
1 tablespoon lemon juice
1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
Instructions
Preheat oven to 325°F. Wrap the outside of a 9-inch springform pan with aluminum foil.
In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of the prepared pan. Bake for 10 minutes, then cool.
In a large bowl, beat cream cheese and 1 cup sugar until smooth. Add vanilla, then eggs one at a time, beating on low after each. Fold in sour cream.
Pour filling over crust. Place springform pan in a larger roasting pan; pour hot water into roasting pan until halfway up the sides of the springform pan.
Bake for 55-65 minutes until center is almost set. Turn off oven, crack door, and let cheesecake cool in oven for 1 hour. Then refrigerate for at least 4 hours or overnight.
For apple topping: In a large skillet, melt 2 tablespoons butter over medium heat. Add apples, 1/4 cup sugar, cinnamon, nutmeg, and lemon juice. Cook until apples are tender, about 8 minutes.
Stir cornstarch slurry into apple mixture; cook 1 minute until thickened. Remove from heat and cool slightly.
Spread apple topping over chilled cheesecake. Refrigerate until ready to serve.

For a cleaner slice, use a sharp knife dipped in hot water and wiped dry between cuts.
