Ingredients
1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 egg
3 tablespoons butter, melted
1 cup apple - peeled, cored and shredded
1 teaspoon ground cinnamon
Instructions
In a large bowl, sift together flour, baking powder, salt, sugar, and cinnamon.
Make a well in the center and pour in milk, egg, and melted butter; mix until smooth.
Fold in shredded apple.
For pancakes: Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
For muffins: Preheat oven to 400°F (200°C). Grease a 12-cup muffin tin or line with paper liners. Fill each muffin cup about 2/3 full with batter. Bake for 15 to 20 minutes, until a toothpick inserted in the center comes out clean. Cool in pan for 5 minutes then remove to a wire rack.
Tips
For extra sweetness, add 2 tablespoons of brown sugar to the dry ingredients.
Serve pancakes with maple syrup and a sprinkle of cinnamon.
