2 cups peeled and diced apples (about 2 medium apples, such as Granny Smith)
1/2 cup all-purpose flour (for crumb topping)
1/2 cup packed light brown sugar (for crumb topping)
1/2 teaspoon ground cinnamon (for crumb topping)
1/4 cup cold unsalted butter, cut into small pieces (for crumb topping)
Instructions
Preheat oven to 350°F (175°C). Grease a 9-inch square baking pan.
In a large bowl, whisk together 1 1/2 cups flour, granulated sugar, 1/4 cup brown sugar, baking powder, baking soda, salt, 1/2 teaspoon cinnamon, and nutmeg.
In a separate bowl, whisk together melted butter, buttermilk, egg, and vanilla until smooth.
Pour wet ingredients into dry ingredients and stir until just combined. Fold in diced apples.
Spread batter evenly into prepared pan.
In a small bowl, make crumb topping: combine 1/2 cup flour, 1/2 cup brown sugar, and 1/2 teaspoon cinnamon. Cut in cold butter pieces using a pastry blender or your fingers until mixture resembles coarse crumbs.
Sprinkle crumb topping evenly over batter.
Bake for 45-50 minutes, or until a toothpick inserted into center comes out clean. Cool in pan on a wire rack for at least 15 minutes before serving.
Slice and serve warm or at room temperature.
