A crisp, sweet hard candy with the classic flavor combination of apple and cinnamon. This recipe yields a beautiful golden candy that's perfect for gift-giving or holiday treats.
Line a baking sheet with a silicone mat or lightly oiled parchment paper. Set aside.
In a medium heavy-bottomed saucepan, combine sugar, corn syrup, and water. Stir over medium heat until sugar dissolves.
Clip a candy thermometer to the side of the pan. Increase heat to medium-high and bring to a boil without stirring. Cook until temperature reaches 300°F (hard crack stage), about 15-20 minutes.
Remove from heat immediately. Carefully stir in apple extract, cinnamon oil (or ground cinnamon), and red food coloring if using. The mixture will bubble up; stir gently until combined.
Pour the hot syrup onto the prepared baking sheet. Let cool for 5-10 minutes until it begins to set but is still pliable.
Using kitchen scissors or a sharp knife, cut the candy into small squares or desired shapes while still warm. Work quickly as it hardens fast.
Once completely cool and hard, break apart pieces. Dust with powdered sugar to prevent sticking. Store in an airtight container.
Tips
If using ground cinnamon instead of oil, the candy may be slightly cloudy.
To make apple-shaped candies, pour into silicone molds instead of cutting.
