Ingredients
4 beef patties (2 oz each, 80/20 ground beef)
4 slices American cheese
2 hamburger buns
1 large onion, diced
2 tablespoons butter
2 tablespoons yellow mustard
4 dill pickle slices
2 leaves iceberg lettuce
2 slices tomato
3 tablespoons mayonnaise
1 tablespoon ketchup
1 tablespoon sweet pickle relish
1 teaspoon white vinegar
1/2 teaspoon sugar
Instructions
Make the spread: mix mayonnaise, ketchup, relish, vinegar, and sugar in a small bowl. Set aside.
Caramelize onions: melt butter in a skillet over medium heat. Add diced onion and cook, stirring occasionally, until deep golden brown, about 10 minutes. Reduce heat if browning too quickly.
Form 4 thin patties slightly larger than the buns. Season with salt and pepper.
Heat a griddle or large skillet over high heat. Place patties on the griddle. Immediately spread about 1/2 teaspoon mustard on each patty. Cook for 2 minutes, then flip. Top each patty with a slice of cheese. Cook until cheese melts, about 1 minute.
Toast buns on the griddle until golden.
Assemble: spread about 1 tablespoon of spread on each bun half. On the bottom bun, place lettuce, tomato, and pickles. Stack two patties with cheese, then top with caramelized onions. Place the top bun.
Serve immediately.
Tips
For extra flavor, add a second layer of spread on the top bun.
If you prefer, use fresh onions instead of caramelized for a crunchier texture.
Leftover spread can be stored in the fridge for up to a week.
